I am excited about tomorrows activity, swimming! In a fully heated indoor facility, of course.
We were delighted to share our lunch today with Justin, awesome dad and husband. He came home a bit early to finish up his work day with us. We had a very satisfying salad. My husband says I am the best salad maker. I am here to share my secrets.
I used a spring mix from Whole Foods. I buy the giant tub. If you are using a bag mix, this salad is probably equivalent to two bags.
12 black olives, halved
1/3 cup of raw pine nuts
1 large shredded carrot
3 chopped tomatoes
1 cup of steamed and cooled peas
dress with easy vinaigrette
Even cats are curious about a good green salad.
I've been enjoying this really easy vinaigrette lately.
one part citrus based vinegar
two parts olive oil
one tablespoon braggs aminos
put it in a jar and shake it up.
This makes more vinaigrette than you will need for this salad, but at least you won't have to make more dressing tomorrow!
All you need to do to make a great salad is pay attention to a few key points. Try to add a protein source like beans or nuts. Consider the texture of your components. Try to include crunchy, chewy and creamy. Or maybe you like, chewy, seedy and oily. Or crunchy, creamy, and oily. It's up to you, just make sure you have variety. A good salad is interesting to eat. I usually add something chewy, something shredded, something sweet and go easy on the dressing. You can always add more.
We also made a raw, white chocolate cheesecake based loosely on the recipe by Ani Phyo. I added a crunch topping and played with the overall formula a bit. This cake is really, really rich. I had to drink four glasses of water after having a piece.

In your easy dressing, what do you mean by citrus-based vinegar...like what, for example? i'm a helpless dork who likes specifics. :-) this salad sounds awesome. I love the crunchy/creamy/oily/nutty/fruity combo!
ReplyDeleteI used orange muscat vinegar from Trader Joe's. You could use grapefruit vinegar or even pear!
